Opgericht in 1870 door James Fleming, is de Aberlour-distilleerderij te vinden op het punt waar de Lourbrand samenkomt met de rivier de Spey aan de voet van Ben Rinnes, een berg in het noorden van Schotland. Het water voor de whisky is afkomstig van Ben Rinnes zelf, en de distilleerderij gebruikt niets anders dan lokaal geteelde gerst om zijn fijne, single malt whisky's te maken. In feite stamt al de gebruikte gerst van binnen 15 mijl van de distilleerderij. Om Aberlour 10 Year Old te maken, wordt na elke zending de gerst zorgvuldig gecontroleerd op kwaliteit. De gerst en het water worden gedistilleerd in speciale distilleertoestellen met ongewoon brede basissen. Maar het geheim van Aberlour's fijne whisky's is het proces van dubbele rijping in het vat. De whisky rijpt minimaal 10 jaar in twee soorten vaten: Oloroso sherry vaten en Amerikaanse eiken vaten. De vaten die eerder werden gebruikt voor Spaanse sherry in de regio Jerez dienen om fruit, specerijen en rijkdom aan de whisky toe te voegen, samen met een donkerdere amberkleurige glans. De Amerikaanse eikenhouten vaten zijn afkomstig van traditionele distilleerderijen in de VS en voegen zoetere tonen van vanille en geroosterde kokosnoot toe. Nadat de whisky is gerijpt, voegt de meesterdistilleerder de twee speciale vaten whisky's samen voor een perfecte balans. Vol en met tonen van specerijen en toffee, biedt deze single malt Scotch whisky een aanhoudende smaak van kruiden en karamel op de tong. Probeer het met lamsvlees, prosciutto, sterke kaas, chocolade, of rijke, romige desserts zoals crème brûlée. |

De whisky maken ze op de traditionele Schotse manier, alleen rijpt whisky vanwege de grote hoogte, de warmte en de droge lucht erg snel, ruim drie keer zo snel als in Schotland. Deze whisky is gebotteld op 46% waardoor de smaken en aroma's nog beter tot zijn recht komen. De Amrut distilleerderij brengt whisky op markt, gemaakt van in India verbouwd en gekweekt graan aan de voet van de Himalaya in de noordelijke provincies Punjab en Rajasthan en de rijping geschiedt op Amerikaanse eikenhouten vaten in Bangalore. Het rijpingsproces versneld enorm, door het bijzondere klimaat in India (zeer koude winters en verschrikkelijk warme zomers). Meer dan een derde van het totaal aantal liters verdampt hier (Angels shares), een enorme hoeveelheid, vergeleken met het gemiddelde verlies in Schotland van 3%. Tijdens veel “blindproeverijen” werd deze maltwhisky door kenners vergeleken met de kwaliteit van een 10 jaar oude Speyside maltwhisky. |

Master Distiller Frank McHardy creëert uit alle verschillende distillaten, die elk unieke smaakkenmerken bevatten, een harmonieuze Irish Whiskey waarbij iedere whiskey uiteraard driemaal gedistilleerd is; het handelsmerk van whiskey uit Ierland.
